Black Tea Mug Cake Recipe
This quick and easy mug cake has just the right amount of black tea flavor. It needs no icing, and it goes great with, yes, a cup of tea!
black tea (loose)
I used loose leaf Twinings English breakfast tea, but any plain black tea will work.
vanilla bean paste
In a small sauce pan, heat milk to just to boiling. Remove from heat, add loose tea, and let steep for 5 minutes.
In a medium-sized, microwave-safe mug, sift together flour, sugar, and baking powder.
Add vanilla bean paste and oil.
Strain tea leaves from milk, then mix into batter.
Microwave for 1 minute to 1 minute and 10 seconds.
Add frosting, if desired.
This recipe will overflow a small mug. I would suggest at least a 12 oz mug.
It is not necessary to remove all tea leaves from the milk. I leave in about half of the tea. (NOTE: Leaving in the full tablespoon may be too much, however.)
I prefer the cake plain, but it tastes great with cream cheese frosting.
Try it paired with a cup of tea!
