Matcha-Filled Cadbury Cookie Sandwiches Recipe
A combination of tasty Cadbury Digestive cookies with a smooth, lightly sweetened matcha icing. Perfect snack for afternoon tea!

  1. Place room-temperature butter and cream cheese in a medium-sized bowl and beat with an electric mixer until smooth.
  2. Slowly add powdered sugar to butter and cream cheese mixture until gone. Icing should now be slightly thicker.
  3. Mix in vanilla and matcha powder until fully blended.
  4. Cover with a lid or cling wrap, and move the icing to the refrigerator for 15 minutes to set.*
  5. Lay Cadbury digestive cookies with chocolate side facing up, then cover surface with matcha icing.
  6. Add a second cookie, chocolate side down, on the top of the iced cookie to make a sandwich.
  7. Place leftover cookies and/or icing in the refrigerator.
Recipe Notes

*If your home is warm, the chocolate on the cookies might melt a bit. In this case, place the cookies in the refrigerator with the icing to make sure the chocolate is set before icing the cookies.
